30 days of bread: I Love English Muffins



The title should be I love homemade English muffins. I love my bread machine too. I love that I can make homemade English muffins in my bread machine.  I've made these so many times that they are almost a staple in our house.  I definitely do not buy English muffins anymore.


Here is the best recipe for Bread Machine English Muffins:

1 cup milk (I usually substitute buttermilk)
3 Tbsp butter or shortening (butter is better)
1 egg
1/2 tsp. salt
2 tsps. sugar
3 cups all-purpose flour
1 1/2 tsps. dry yeast
cornmeal

1. Put ingredients in bread machine in the order listed. Pick dough cycle.
2. After cycle is finished, spread cornmeal over your work surface.
3. Divide dough into 8 to 10 rounds- I just shape them in my hands.
4. Let rise for 20-30 minutes
5. Heat a cast iron skillet or griddle over low heat.
6. Cook 5 to 7 minutes on each side or until golden brown.

Split them open with a fork or knife...eat with your favorite toppings. I've even made 2 batches and had English Muffin pizzas for lunch.
