30 Days of Bread: Pumpkin Cranberry Bread

I've been experimenting with lots of bread recipes lately and decided to have a 30 Days of Bread series.  I even made that little button on the side and I know it's not that impressive...but for me it took a lot to come up with that. 

Most of these recipes came from other recipe sites or pinterest, so I will link up to the original post or recipe when possible.  Some have been great, some have been flops, and some I've made more times than I can count.  I hope you enjoy this series and make some bread of your own!  If you like grab that button on the side and do whatever!  :)



This is an awesome pumpkin bread!  I've made it several times and have gotten raves every time.  It's not the healthiest, but it's really good. 

 




Pumpkin Cranberry Bread

2 eggs
2 cups sugar
1 cup canned pumpkin
1/2 cup vegetable oil
2 1/4 cups all-purpose flour
1 tsp. baking soda
1 Tbsp. pumpkin pie spice
1/2 tsp. salt
1 cup fresh or frozen cranberries chopped

Beat eggs and sugar.  Add pumpkin and oil, mix together well.  Add dry ingredients, stir until moist.  Fold or stir in cranberries.  Spoon into 2 greased 9 1/2 inch loaf pans.  Bake at 350 degrees for 50-55 minutes or until done.  Cool in pan for 10 minutes and then finish cooling on wire racks.
