Zucchini and Squash

I have to say that I like zucchini...basically anyway I eat it.  Some people in my family, ahem...Tera has a harder time finding recipes she really likes.  We are experimenting right now, since the zucchinis are coming in. 

Here are some favorite zucchini and squash recipes we've found:

Tuna Zucchini Burgers  This link had a bunch of recipes, I have yet to try.  The zucchini meatballs look interesting. 

Zucchini Pizzas  We made these half tomato/half alfredo. 



 
Zucchini Fries  Okay, I didn't have any shake and bake so I just used flour and Italian bread crumbs...still yummy!

Zucchini Tots   Tera made these by herself and SHE LIKED THEM!!!!!









Stuffed Pattypan Squash  This is my new favorite way to have squash...my husband loves it, too!

This next recipe is one of the best ways to have yellow squash...I love it! 



Mrs. Eby's Squash Casserole

1 1/2 lb. yellow squash salt and pepper 1 jar pimentos, chopped 4 oz. (1/2 pkg.) herb stuffing 1 medium onion, chopped 1 cup sour cream 1 cup cream of chicken soup 3/4 stick margarine

Cook squash, mash, season to taste. Saute onion in butter. Then mix all ingredients together.

Bake 30 minutes at 350 degrees. .
    Garlic Herb Zucchini Bread  We had this last night as pizza---great pizza crust!
Zuck-A-Mole  This is great with chips or veggies!
