Sweet Breads

I've been in the mood for baking since it's cooled off a bit.  My bread machine is getting a workout.  I printed out a list of bread recipes 4 years ago of various kinds, but made a couple of the plain ones that didn't really work for me.  This week I tried the Maple Oatmeal and Banana Raisin recipes, they will definitely be added into our rotation.  


Maple Oatmeal Bread
This is a heartier bread, but got raves from all the kids. 
3/4 cup plus 2 T water (I had to add more water since the mix looked pretty dry)

1/3 cup maple syrup

1 T vegetable oil

1 tsp salt

3/4 cup quick cooking oatmeal

2 1/2 cups bread flour (I used half bread flour and half all-purpose flour)

2 1/4 tsps active dry yeast



Banana Raisin Bread
This recipe is extremely awesome and moist.  I sliced it for the kids the night before and found nice, moist pieces in the morning.  It didn't even need toasting. 

1/2 cup plus 2 T water

3 T honey

4 1/2 tsps veg oil

1 egg yolk, lightly beaten

1 medium ripe banana mashed

3/4 tsp salt

3/4 tsp cinnamon (I increased this to 1 tsp.-we like cinnamon)

3 cups flour

1 1/2 tsps active dry yeast

1/2 cup raisins

1/3 cup chopped walnuts  ( I left out nuts, since our sons is allergic)

Place the 1st nine ingredients in pan in order suggested by manufacturer. Select basic bread settings. Bake according to bread manufacturer. Just before the final kneading, add raisins and walnuts.
