10 Pattypan Squash Recipes



A couple of years ago, we were introduce to the pattypan squash.  The plants are prolific and we usually have A LOT sitting on our counter.  I'm always on the lookout for recipes that my husband and kids will enjoy. I've done a lot of searching and have come up with 10 recipes to share with you!  Some I've tried already and others I'm looking forward to making with the many pattypans on my counter!


10 Pattypan Squash Recipes:

The texture of this pie looks similar to a sweet potato or pumpkin pie.  A yummy way to use some of those pattypans on the counter!  

Similar to a quiche, this recipe is a kid-friendly way to introduce any kind of squash.  

A huge hit with my kids!



When there are foods that kids do not "prefer", it's a good idea to let them find recipes for the family.  My daughter found this recipe and we can't wait to try it!

I could make myself sick eating this yummy recipe.  You can easily substitute pattypans for the yellow squash!  

1 1/2 lb. yellow squash
salt and pepper
1 jar pimentos, chopped
4 oz. (1/2 pkg.) herb stuffing or 1 package of Stove Top Stuffing Mix
1 medium onion, chopped
1 cup sour cream
1 cup cream of chicken soup
6 Tbsp. butter
 
Cook squash, mash, season to taste. Saute onion in butter. 
 
Then mix all ingredients together. 
 
Bake 30 minutes at 350 degrees.

Stuffed Pattypan Squash
My husband LOVES this recipe!!!



3 Pattypan squash
4 small zucchini
1/2 lb. sage sausage
Olive oil
1 1/2 cup Veggies ( I used spinach, 1 bell pepper, 4-5 chives, 5-6 garlic cloves, zucchini insides)
2 cups cooked rice
4 oz. cream cheese
Mozzarella cheese
spices to taste (sage and thyme)
bread crumbs

 

Boil pattypan squash for 15 minutes.  Cut zucchini in half and scoop insides.   After pattypan is cooked and soft, cut on bottom and top.  Retaining it's shape, scoop out the top of the pattypan. 
 

Brown sausage. 
 

Saute veggies until soft.

Add sausage, veggies, rice and cream cheese.


Stuff into squash. Sprinkle with bread crumbs. 


Bake on 400 degrees for 20 minutes then top with cheese and put back in oven until melted.
