30 Days of Bread: Buttermilk Potato Bread

I love the texture of a potato bread.  The crust is really crunchy, but the inside is so moist.

Buttermilk Potato Bread

1 cup plus 2 Tbsp. buttermilk
1/2 cup instant mashed potato flakes
1 large egg
2 Tbsp. butter cut up
1 tsp. salt
3 cups all-purpose flour
1 tsp. dried thyme
1 1/2 tsp. yeast

Put all ingredients in bread machine, adding potato flakes with liquids.

Use basic white cycle and whatever crust setting you prefer.
